It is a traditional recipe in Malabar region of Kerala, made especially during Ramadan and as a tea time snack…..
The fillings may vary with a person’s interest, you can use egg, kas kas and different nuts as filling ingredients.

Ingredients

1. Ripe banana  – 3
2. Grated coconut – 1 cup
3. Ghee – 3 tbsp
4. Cashew and raisins – fried
5. Sugar
6. Cardamom powder – a pinch

Preparation

Steam the bananas and smash them without lumps
Saute the other ingredients in ghee and make the filling.
Make small balls from the banana dough
Grease your hand with rice powder and flatten the balls.
Keep some of the filling at the center and roll them slowly to cylindrical shape and seal the ends by flattening at the tip.….the traditional shape is as shown in the picture..…..
Fry them in oil and serve warm….

Raw mango juice

The sour taste of raw mangoes with addition of some spices turns it to a refreshing drink. All you need is 2 minutes of your busy schedule …….some mangoes and spices of your favorite.

Ingredients 

  • Raw mango – 1 big
  • Sugar – 4 tbsp…..if your mango is too sour, add more
  • A small piece of ginger chopped
  • A pinch of pepper
  • 2- 3 mint leaves
  • And of course cold water

Preparation

  • Peel the mangoes, slice to pieces……
  • Blend them with ginger, mint , pepper and sugar
  • Add cold water and there you have your refresher…….COOOL…..

Fried modaks ( with egg stuffing)

Modaks are tea time snacks….they are either fried, baked or steamed. Today let’s give a try for fried modaks that too with a spicy egg masala stuffing…..

Ingredients

For making dough,
All purpose flour – 1 cup
Salt to taste
Lukewarm water
Oil

For making the stuffing
Hard boiled egg  – 2 ( chopped)
Chopped onions – half a cup
Tomato chopped – quarter cup
Garam masala – half tsp
Chilly paste
Salt
Coriander leaves paste
Turmeric powder a pinch
Oil

Preparation

• Make the dough and keep it aside for 5 mts
• Saute onion in oil till it changes its color.
• Add tomato, chilly, turmeric powder, salt, garam masala and coriander leaves paste.
• When the sauce it well cooked add the chopped eggs.
• Mix with care .

Make small balls of the dough and flatten them to approximately 5 cm diameter by applying flour on both sides. Keep a spoonfull of egg masala into the paratha and close them making a shape of a cone.( as in the image)…..
Deep fry , serve hot, dip in any of your favorite sauces or chutneys and have a crunchy snack for tea……….

Aloo paratha

Aloo paratha or flat bread stuffed with potato….

Parathas are flat bread made of wheat flour. It is served with curry, pickles and yogurt. Variety of parathas are made in North India, incorporating masalas into the dough or using it as a filling.

Aloo in Hindi means potato, and I am explaining a paratha stuffed with potato masala….

Ingredients

1. For making paratha,

  • Wheat flour – 2 cup
  • Ghee – 1 tbsp
  • Salt
  • Warm water half cup

.

2. For making potato masala,

  • Cooked and smashed potato – 2
  • Onion sliced – 1
  • Ginger garlic paste – half tsp
  • Green chilly paste – half tsp
  • Garam masala – half tsp
  • Oil to saute
  • Salt
  • Turmeric powder a pinch

  Preparation

For making parathas

Mix the ingredients no 1 and make it to a dough in consistency of which it doesn’t stick to your hands. Make small balls of the dough and flatten to a size of 5 cm diameter and half an inch thickness. Use wheat flour while making parathas.

For making potato masala,

   Saute the onion in oil and add a pinch of salt to it. Add the remaing ingredients (in 2) and mix the potatoes. Allow it to cool.

Take a flattened paratha keep a spoon of masala onto it. Fold it and again roll it to a ball. Flatten the balls again and cook in a pan. When one side gets cooked add ghee and cook the side once again…..

It seems a tremendous work for the first time….but practice makes you faster….But the result will surely make you satisfied…….

Serve your hot parathas with yogurt or butter. You don’t need an extra side dish for your aloo paratha.

Lemon rice

Lemon rice is a simple menu which you can include in your lunch box. It can be served with raita, pickles and curd.

Ingredients


1.Basmathi rice – 1 glass
2.Lemon juice – 3 tbsp
3. Salt
4. Ghee

  • Peanuts roasted
  • Cashew
  • Pepper corns
  • Cinnamon
  • Bay leaf
  • Cloves
  • Cardamom
  • Turmeric powder a pinch

 Preparation

  • Cook the rice with double quantity of water. Add salt to taste.
  • Saute the ingredients no.4 in a kadai. Switch off the flame.
  • Add lemon juice to it. Mix the rice with the sauted masala.
  • Switch on the flame and mix the rice for 1-2mts,without smashing.
